#4: Homemade Oreos

*11 in 2011 is my New Year’s resolution project.  I have eleven attainable goals that I aim to meet by the end of 2011.  This post is a discussion of one of them*

Goal #4 in my 11 in 2011 project is to cook one new recipe every month.  I already made a new recipe for January, but I jumped the gun on February and decided to make these a few days early.  I think the more you try new recipes, the more you want to keep adding more new ones.

I found the recipe for these at Chronicle Books Blog, which was linked to by another blog, which I can’t remember.  It’s a recipe that involves a little prep time, a lot of waiting, some baking and a little more prep.  I didn’t take photos of the first phase, but basically you create the cookie dough, let it sit for an hour, then roll it into a log with parchment paper and refrigerate it for two hours.  The log you see above it what results after that.  You then slice the log into cookies (and I have to admit, the dough is absolutely delicious at this point.  I may have eaten a bit too much :) )

These get baked in the oven, and in the mean time, you make the frosting/filling.  I’ve never made frosting before, but it turns out to be really easy.  The key I found is to let the butter sit out for a long time so it’s really soft.  That, and knead the butter and sugar together by hand if you don’t have a stand mixer.

Once the cookies are all done and cooled, you put the filling on one cookie, sandwich another on top, and then voila!  Amazingly tasty homemade “Oreos”, that are seriously better (and better for you, since there’s no preservatives).  Om nom nom!

“I still read fairy tales…”

Tunics and leggings and boots always make me think of woodland fairies.  Reading two volumes of The Legend of Zelda mangas today only added to that association.  It’s true, I’m still kind of a video game nerd, even if I don’t play them as often as I used to.

And of course, cute (and not so cute) cats frequently appear in fairy tales.  This one is my neighbor’s cat, but she likes to cross the street and visit sometimes.  She’s actually made a guest appearance on my blog before.

Bento Box Saturday: 1-13-11

I’m trying to find more ways of adding protein to my diet, so I re-learned how to hard boil eggs last week.  It’s really not that hard to do, and it’s such an easy (non-meat) way to get some extra protein into my day.  For this bento, I crushed up the hard boiled egg over my salad right before I ate.  Very yummy!

The Babybel cheese was inspired by Cute Food for Kids.  Adults’ lunches should be fun too :)

#4: Coq Au Vin

Goal #4 in my 11 in 2011 project is to cook one new recipe every month.  For January, I decided to try out Coq Au Vin.  I don’t really know why this recipe caught my eye.  Maybe it’s just that I’m still interested in French cooking after Julie and Julia, or maybe it’s just that I’m sick of cooking chicken the same couple ways every single week.  Anyhow, this ended up being my first new recipe of this project, and OMG, it was awesome!

I chose to use the recipe from Joy of Cooking, which as far as I’m concerned is pretty much the most important cookbook you could possibly own.  Seriously, I use this cookbook almost once a day – it has just about everything you could ever need.  The only change I made to the recipe was omitting the bacon – I’m trying to cut back on red meat, and the dish is more than rich enough without it.

Of course, I tried to make sure that the ingredients were fresh as possible (and organic for the most part).  I bought most of the veggies from a local farmer’s market, the broth was made from scratch, the chicken was organic (I do my best to only eat organic meats and dairy).

As the name of the dish implies, the real flavor and richness comes from cooking the chicken and vegetables in red wine for half an hour.  I didn’t realize just how amazing and rich this would be!  The final product was amazingly delicious and filling.  I served it over white rice with steamed broccoli on the side (I prefer brown rice, but I have yet to convert my boyfriend).  Bon appetit!

“It’s all make believe, isn’t it?

This outfit is a sort of make believe outfit, because I actually never left the house the whole day.  I just put on the shoes for the pictures; the rest of the time I was wearing cozy socks and slippers.  But I loved how the outfit came together, how comfy and chic it made me feel, so I decided to take pictures anyway.

I mentioned that part of my 11 in 2011 project is to make sure that I don’t put off doctor’s appointments.  Last week I finally went to my primary care physician and got an antibiotic prescription for my acne.  My doctor warned me that it would make my skin flare up before it got better.  I didn’t take any other outfit photos last week because it was peeling horribly.  This was the first day that it wasn’t painfully red and blotchy, so I decided to get pictures in.  I’m still so glad I finally went to the doctor – it feels good to know that I’m actually doing something about my skin problems now instead of constantly complaining about them.

I came to a realization this weekend: I am a Maker.  I love to make things; I love the process of creating something from a lot of little pieces and making something amazing out of them.  Whether it’s a skein of yarn, random articles of clothing, some flour, sugar and butter.  I just love to create stuff.

There’s something so soothing about the process to me.  I was experiencing some anxiety this weekend – no real reason, I just sometimes get that way.  I started playing around with my jewelry and ended up creating the necklace above out of a couple pieces I had that I didn’t wear often.  Then I baked a batch of cookies.  And all that anxiety disappeared.  Creating is a beautiful thing.

Usually I like my bentos to have several, separate elements to give me a well-rounded lunch.  Lately though, I’ve been trying out mixed bentos, where I mix all the elements in my bento into one big dish.  I take all the small compartments out and dump them into the bento box itself.  That’s what I did this week, with some super yummy taco salad.

Here’s what I packed:

  • Romaine, spinach, shredded cheddar
  • Ground beef with taco seasoning
  • Fresh pico de gallo
  • Crushed taco shells
  • Apple for dessert

11 in 2011: My New Year’s Resolutions

As happens at this time of year, I’ve been reflecting a lot on my quality of life and what I can do to improve myself and generally be happier.  I’ve never been a big fan of big, difficult New Years Resolutions (Lose 50 pounds!  Go to the gym everyday!  Handmake my entire wardrobe!) At the same time, general resolutions seem ineffective to me, since it’s too easy to really change nothing (Be less stressed out!  Be better with money!).

So with all that in mind, I’ve decided to come up with an attainable 11 in 2011 list.  Each item on my list will have at least one specific task assigned with it.  I want to be realistic in my goals, but I also want to make sure that I’m accomplishing things I’ve been wanting to.  I’ve grouped my goals into categories, since they each fit pretty neatly into certain areas.  I’ll be posting about my 11 in 2011 as a series through out the year.

Work

1: Finish my teaching certificate:  In the county I work in, you have three years from the point of being hired to complete your teaching certificate.  I have one and a half left.  All I need to do is take two expensive tests proving that I’m intelligent enough to teach (because apparently my Master’s degree doesn’t do that) and take a course about working with English Speakers of Other Language (ESOL) students.  I’m hoping to get all of that out of the way over the summer.

Food

2: Subscribe to local food co-op delivery: There is a hydroponic farm that delivers vegetables to subscribers in my neighborhood once a week.  The price is extremely reasonable, all the veggies and fruits are local, and most are organic.  Why am I not doing this yet?  I’ve been saying I was going to support this local farm for years.  It’s time that I get around to it and get some delicious, fresh veggies.

3: Learn how to use kitchen knives properly: I love to cook, but I have no idea what the proper technique for chopping garlic versus carrots versus onions is.  Ideally, I’d like to take a class somewhere local.  If I can’t find anything, there’s always YouTube.  While I’m at it, I should really buy some proper kitchen knives too.

4: Cook one new recipe every month: I love to cook, but I have a habit of falling into a rut of making the same recipes over and over again.  At least once a month, I want to change this up and cook something new.  I already have several cookbooks, and I can check out more from the library too.

Health

5: Stop procrastinating doctor’s appointments: I finally have health insurance.  I’ve had some semi-serious skin problems for the past three months.  Why exactly have I not been to see my primary care physician?  My concrete goal for 2011:  see my dentist, primary care physician, optometrist and gynecologist at least once in the year, and make sure I go more if I need to.

6: Go deeper in my practice of yoga: I’m relatively consistent at practicing once or twice a week.  I’d like to try new classes and yoga styles.  I want to learn about ayurveda.  And I need to become more disciplined in a home practice.  Concrete goals: check out books and videos from the library, visit more yoga studios, make an appointment for an ayurvedic consultation at my yoga studio.

Crafty

7: Knit myself a sweater: Despite the fact that I’ve been knitting for almost ten years now, I’ve never knitted a warm, cozy wool pullover.  At least not one that doesn’t itch like crazy, or that is something I wouldn’t want to wear in public.  I’ve already ordered my yarn for this one :)

8: Plant a butterfly/bee garden: I’ve had plenty of herb gardens in recent years, but I haven’t planted a real flower garden in a long time.  I’d really love to plant a butterfly habitat this year.  And it would be a great project to work on with my mom.

9: Take more photos more often, and make them better: I’m capable of taking really good photos – at one time, I was considering it for a career.  I need to be better about taking my time to make my shots better.  I also want to add to my equipment: get my flash fixed for better indoor shots, get a 50mm lens to be able to carry my camera around, get a nice camera messenger bag.

Life and Money

10: Make a new budget and stick to it: I’m making more money right now than I’ve ever made before in my life.  Yet I still feel like I’m living paycheck to paycheck.  With my bills, student loan payments, rent, groceries, there really isn’t a lot left over.  And I keep overspending every month.  I’ve made a new budget spreadsheet, and this year, I’m going to be thorough about keeping up with it.  I need to be more disciplined and really think through purchases.  I have a bad habit of seeing something and saying “Oh, pretty!”, and buying it because there’s money in my account.  Then a week and a half later, I’m counting down to my next paycheck and hoping there’s no purchases that I forgot to take into account.   This has to stop.

11: Hang out with In Real Life friends more often: By my nature, I am actually a really shy and sometimes socially insecure person.  I’m not very good at keeping up friendships beyond Facebook comments.  I’m nervous about asking people to hang out with me, because I’m afraid they won’t want to.  I’m anxious about making new friends because I’m afraid they’ll find me annoying.  I don’t really have a bff.  So my concrete goal in this area: hang out with an In Real Life friend at least once a month.  This could be going out for coffee, going thrifting, chatting on Skype.  But I need to make a concerted effort.  While I love all my blogosphere friends dearly, I need to spend some time with people outside of the interwebs as well.

“Of Yellow Leaves and Gossamer”

Well, one of my New Year’s Resolutions to take better pictures is off to a decent start.  I decided to try shooting with a lower aperture and taking lots of shots.  I ended up with quite a few that came out horribly, but I got a few gems.  After adjusting the exposure and contrast, I ended up with some images that I’m pretty happy with.

I’ve also found a better solution for post titles.  Goodreads has a quote search feature which is pretty handy, so I can search for keywords related to my post and then find appropriate quotes to go with them.  This is much easier than what I was doing before, which was trying to keep a word doc of quotes from books I was reading.

And may I take a moment to lament the fact that Morelle closed her shop?  I know it’s been months, but I still feel at a loss when considering getting a new purse that isn’t from her shop.    Over half of my bags come from her shop.

Shopping Plan: December

When Boden had it’s awesome 50% off winter sale, I finally caved and bought some stuff directly from them.  I’d been drooling over that cardigan since I first saw it in the catalog months ago, and I absolutely love the print on the dress.  I’m planning on getting the dress tailored, since it’s a bit loose in the chest and waist.

This purchase was due to the awesomeness of Groupon.  They had a deal going on where you could purchase a Groupon that would allow you to get $50 worth of clothes from Nordstrom Rack for only $25.  I ended up going over the $50 mark, which was why my total came out to $35.86.  Still a pretty insane deal.

That makes $153.86 spent.  So even with some awesome Boden sale purchases, I still didn’t go over budget.

I’m not going to reflect on my Great Shopping Plan of 2010 at this time.  Honestly, the past few months, I just wasn’t feeling it.  I feel like I’ve gotten the hang of keeping to a budget with my clothes shopping, and documenting it just feels boring to me now.  But I have a new project lined up for 2011, which I’ll talk about on Friday.  I’m super excited about this one:  it will be called 11 in 2011.  Stay tuned :)
